Vegetable Soup




Andrea is sick so today is couch, bad cooking shows, and vege soup time. This recipe is straight from Joy of Cooking. Simple, quick, and gets the job done.

It says to vary the vegetables in this recipe and to use about 2 cups of them. I used them all. I'm crazy like that. I also doubled it.

3 cups Beef, chicken, or vegetable stock. I went with chicken.

1/4 cup onions
1/4 cup carrots
1/4 cup celery
1/4 cup potatoes
1/4 cup 1-inch green bean pieces
1/4 cup corn kernels
1/4 cup baby peas
1/4 cup lima beans
1/4 cup chopped cabbage
1 clove garlic, minced
1.5 teaspoons tomato paste

Bring to a boil over high heat. Reduce to low and simmer for 10 minutes. Add salt and pepper to taste.
